6mm is plenty. Nothing is over 5mm thick on my car.

Thanks Steve, Have you got any steel supplier around the (inner) north thats good to deal with?

I use Handy Steel Stocks in West Heidelberg. They cut to length too. (Only longs, not sheet)

I’ve been using them for years. Loads of stock, easy to deal with.
