how good are these things? would they be a good substitute for a locker?

They'd be a good LSD. An LSD will never be a locker but they are heaps better than open diffs.

Would the either of the rear vitara (10-12bolt) lsd's fit into a sierra?

If they were cheaper then possibly yes but for $590 i know i would rather get a locker
