I went for shelves that fit a 32L Engel snuggly in the LHS and plastic boxes in the RHS. A bit more flexible than drawers IMO because I can have nice neat boxes when on trips, or take them out and just have a place to chuck the air compressor, tools, snatch, whatever when offroading.

I was thinking the same, maybe building space to fit a pair of plastic tubs so I can swap them in and out as needed. I like how if someone looks in the car it's all out of sight.
I'm going to build a pair of drawers soon (steel got delivered today.) I'm going low profile, so the top deck sits at the same height as the rear seats when they're down = flat deck full length. Going two drawers, side by side. They'll only be 200mm high, but that's enough for tools in one and recovery gear in the other, which just stops all that rattling around in the boot. I need to maintain most of the space back there as I often have to carry bulky crap.

I test fitted the Engel and it only fits when the seat back is folded fully forward, and after one handle is removed from the fridge.. Bloody tight fit!
I might do the same, a low shelf with two draws underneath, then make a slide for the Engel on top.
