I thought i would put this here as im a complete noob with this stuff at the moment. Does anyone what the legalities (N.S.W) of changing the chassis are or if you are allowed to do it in the first place? I bought a vitara for parts and and the chassis looks in good condition mines a bit worse for wear so just seeing if i can use it.

Different chassis is a different car according to the powers that be.
Swap anything you like but you will have to register it as a different car when done.
