So I've found a carburetted G16b engine to replace my old engine, but the old one was Efi. Am I able to just swap the carby off and chuck the efi system on?

Quick answer is, are you sure it's a B? - with a carby, maybe it's single point fuel injection? or from an odd early Swift?)
If it really is a G16B carb, it's a rare beast, not often sighted in captivity, so not 100% sure on the following:
The ports on the head are (probably) different - round Vs square.
No, don't be tempted to swap heads - also likely to be different tooth profile on the timing belt.
Crank pulley & belts are likely to be V, instead of multi rib, but should be able to be swapped with the bits off your old engine.
All in all, it would be taking a bit of a punt, that unless really cheap & known to be a great running motor (it's going to be a little older than your 1995 car) it's not going to be worth it.

Thanks for the info, I ended up not buying it
Yeah I'm not completely sure if it was a G16b but it was a 1.6 litre 16 valve Suzuki engine, had the same style valve colour but I haven't been in the game for long so its hard to tell.

If it's a 1.6 16C engine it's a G16B. Unless you 100% confirmed it was carburettor it's most likely it was throttle body EFI, which looks virtually indistinguishable from a carby at a glance, just has more wires than normal.
